Here is my trick to making Ensalada de Repollo (Latin Cole Slaw) FAST using a high-speed blender! Inspired by a commonly overlooked side-dish that is absolutely delicious in Nicaragua :)
Recipe (I doubled this for the video):
- 1/2 a head of cabbage (peel off outer layers, cut out core, chop into big chunks)
- 2 carrots, peeled and chopped up
- 1/2 a small onion
- 1/2 cup of white vinegar (or red wine vinegar) *I also added Apple cider Vinegar
- 1/4 cup or more of water
- 1/2 generous teaspoon of salt
**to make it more authentic also add:
- juice of one small limon
- 1/2 a tomato, chopped up
Prepare as shown in the video, mix well, then let sit/marry for at least 3-6 hours in sealed containers and refrigerate afterwards! Tastes even better as it marinates, and is perfect to accompany any (savory) meal or added to any sandwich! Enjoy!
